Hi hats? Yep that’s what I said??? 
They are one intimidating cupcake. 
I feel that I have a good grasp on a cupcake but this guy, is intimidating.
I am using the bakerella recipe found HERE
What is a “hi hat” exactly? 
It normally consist of a chocolate cake with meuriange frosting dipped in chocolate. 
To complicate things there are also hi hats with camrel or peanut butter, or fruit fillings.
Just to help everyone else’s self esteem out I took one for the team and I am sharing with you my first run in with this recipe (your welcome in advance J ). I don’t know how many blogs and recipe reviews I have read in the last few years but they make everything seem so easy and hunky dory 
(for a lack of a better word) 
But not me, I am REAL and I make MISTAKES, 
lots of them actually!

Mistake number one:
Have the right tools, don’t improvise like me. It makes life easier if you buy it once and buy it right. I don’t like junk and clutter and I don’t use a double boiler often so I of course improvised and used a small pot and a heat proof bowl…that was to small! If you’re going to do something go big or go home right! Geez, so here is my little pot with all my egg whites spilling out of it, which then in turn got on my stove and would burn and make a horrendous mess for me to clean later. Not to mention I could not get the hot bowl out of the boiling water…tricky little thing!
Mistake Two:
I didn’t realize I really had to sit there for 12 minutes with a hand mixer, I was so bored and wished I had my blue tooth in my  ear so I can call a friend and annoy them with a mixer in the back ground. Lucky for my friends I could not find my blue tooth that day!



Mistake three:
The recipe said to use sugar; it did not specify powdered sugar so I assumed it meant regular granulated sugar! Nope that can’t be I thought to myself, if I use granulated sugar in frosting I will be able to feel all the granules being crushed by my teeth. I went against my better judgment and used “sugar” as directed. So if you use this recipe, make sure to use powdered sugar not “sugar”!
The next thing I would have done different is not fill it full as the recipe says. The batter does not rise much and I didn’t think it tasted all that great either. When I did it again I used my fav chocolate cake recipe instead of this one. Maybe even spray the top of the pan so the “muffin top” does not have to be chiseled out!
Even though I used the wrong sugar, it still was stiff enough to dip in melted chocolate 
(after being in the freezer for 10 min)

They did not turn out as pretty as I wanted to but not bad for my first run at them! 
The more I did it the better it became.
So there you go, my honest and raw opinion on high hats, regardless if you asked for it or not. 
High hats kind of reminded me of an old fashion whoopee pie. 
Not my favorite but fun to try and say, “Been there done that"
