this book is FULL of amazing recieps ideas!

note: i would wear a bib when flipping through these pages...

i may or may not have drooled on to the page :)

i decided {after a LOT of debate - trust me} to make her pina coloda recipe!

maybe because i am in denial about fall and the holidays being just around the corner...

or maybe it was this picture... YUM!!!

either way i was so excited for this recipe

AND it was super simple--

you start with a basic recipe ice cream base.

i went with cancun coconut but there are lots of great basic recipes to choose from.

 all you need is:

2 cups coconut cream

2 cups coconut milk

1 tsp of vanilla

1 tsp cocnut extract

16 oz can of crushed pineapple with the juice

-------

it was super easy to make too-

just whip the coconut cream until thick

and then gently fold in the remaining ingredients!

then transfer this to your ice cream machine, follow your machine's directions and then freeze!

i added a little pineapple sauce and coconut shavings on top too :)

how yummy is that??

i didn't have a pineapple to display it in, but it was awesome.
