i love this recipe. 
my mom made this growing up and it was one of my fav.

here is how you make it.


take coconut cookies -- NOT the soft macaroon ones.
the crunchy ones.
place in a large ziplock bag.
crush them.
{my kids like this part - and yes they are in thier pj's but i have a reason!!!
you need to make this early in the day so it will set up by the time of the event}


 


take softened sherbert {i use raspberry. use whatever you like}
scoop about 1/2 of the carton into a large bowl



add 2/3 of the crushed cookies and 1 cup of coconut


mix


add an equal part of cool whip
{not very exact i know my mom does not really work with recipes!}


spread into 9x13


add remaining cookies over the top
place in freezer for at least 2 hours


remove about 15 min before serving
cut squares and serve.
