{recipes} farmers market follow up

remember our little farmers market outing?
well here's what we made....

southern green beans and bacon & fresh grilled corn salad

{side note: i recently moved into a temp. apt. until we can move in our new house... the lighting is wonderful. SIKE. sorry about the photos. its the best i could do at the time...}

FIRST
the green beans.
they were huge & so yummy looking.
i have some very fond memories of picking off the ends with my sister - "snap beans" we called them, sitting out on the porch in the summer. i thought it was about time i made aubrey do it. and even though she does not have an awesome sister like i do & we did it inside - she still had a blast.... and maybe she will have those things next time we do it
(just kidding family. please do not send me 50 emails asking if i am preggo. i'm not. it was a joke k?)


1. pick off the ends - leave em long or snap them in 1/2


2. saute bacon ( i love real bacon but the bits will work too), boullion cube or two, & some butter (we use vegan at our house - thanks to my dairy free little man) until crispy
3. add beans. cover with water almost to the top of the beans.
4. bring to a simmer & let it do its work uncovered for about 30 min
depending on how you like your beans. we like em soft at our house.

easy & yummy. enjoy!


SECOND
the corn salad
i love a yummy summer corn salad.
this one used so many of the ingredients from our larry's trip we just had to make it.

1. dressing : 2 TBS olive oil, zest and juice of 2 limes,
diced red onion, S/P to taste


2. grill the corn & peppers


3. cut corn from cob, remove charred skin from pepers & dice.
4. optional of course: add in cherry tomatoes halved & cilantro


combine with dressing and enjoy!
